Beef & Chunky Vegetables Curry
Ingredients

oil

2 cloves
garlic (crushed)

1 kg
beef (diced)

|
0.25 cup
Valcom curry paste red
|
|
2 tsp
Squid Brand fish sauce
|
|
500 g
favourite vegetables ((potato,pumpkin,carrot), chunky cut)
|
|
1 cup
beef stock
|
|

tomato (s)
|
|
0.25 cup
basil leaves (to serve)

Preparation

1.
| Heat oil in a large deep frying pan over a medium heat and brown the garlic and beef well. |
|
2.
| Stir in the Valcom Red Curry Paste and continue to stir fry for 1 minute. |
|
3.
| Add the vegetables to pan and stir to coat vegetables well. |
|
4.
| Pour over the beef stock and fish sauce, simmer the curry over a low heat for 1½ hours until beef is tender. |
|
5.
| Just prior to serving toss in the diced tomatoes and basil leaves. Serve hot with steamed Jasmine rice. |
