Beef & Chunky Vegetables Curry




Ingredients

2 tbsp oil
2 cloves garlic (crushed)
1 kg beef (diced)
0.25 cup Valcom curry paste red
2 tsp Squid Brand fish sauce
500 g favourite vegetables ((potato,pumpkin,carrot), chunky cut)
1 cup beef stock
2 tomato (s)
0.25 cup basil leaves (to serve)

Preparation

1. Heat oil in a large deep frying pan over a medium heat and brown the garlic and beef well.
2. Stir in the Valcom Red Curry Paste and continue to stir fry for 1 minute.
3. Add the vegetables to pan and stir to coat vegetables well.
4. Pour over the beef stock and fish sauce, simmer the curry over a low heat for 1½ hours until beef is tender.
5. Just prior to serving toss in the diced tomatoes and basil leaves. Serve hot with steamed Jasmine rice.
