Massaman Curried Sausages with Mash




Ingredients

1 kg sausage (thick)
1 tbsp oil
2 onion (sliced thinly)
410 g Valcom thai massaman curry sce
0.5 cup chicken stock
400 g peas (mash to serve)
green beans (steamed to serve)
mashed potato (to serve)

Preparation

1. Blanch sausages in simmering water for 2 mins. Remove pot from heat and allow sausages to rest in the water for 5 mins. Drain well.
2. Slice sausages into thick slices diagonally.
3. Heat oil in a large frying pan over a medium heat and brown onions and sausages well for 5 – 6 mins.
4. Pour over the Valcom Massaman Curry and chicken stock, bring to the boil stirring. Reduce heat add the chick peas, cover and simmer stirring occasionally for 20 minutes.
5. Serve hot with creamy mashed potato and steamed green beans.
