Thai Tuna & Vegetables Frittata




Ingredients

400 g canned tuna (in oil, drained)
400 g Poonsin mixed vegetables (, drained)
100 g spinach (leaves, washed)
1 red capsicum (diced)
8 eggs
100 g Valcom curry paste yellow
400 ml TCC coconut milk
coriander leaves (to garnish)
salad (to serve)
Mae Ploy sweet chicken chilli sauce (to serve)

Preparation

1. In a large bowl combine the tuna, Poonsin mixed vegetables, spinach leaves and red capsicum, mix well.
2. Place tuna mixture into a deep rectangular baking dish or into deep individual muffin tins, small pie dishes.
3. Whisk together the eggs, Valcom Yellow Curry Paste and TCC Coconut Milk pour over the tuna and vegetable mixture . Shake well to settle.
4. Bake in the pre-heated oven 170˚C for 45 minutes until firm to touch and golden.
5. Serve hot with sweet chilli sauce and fresh garden salad.
