Thai Tuna & Vegetables Frittata

| In a large bowl combine the tuna, Poonsin mixed vegetables, spinach leaves and red capsicum, mix well. |

| Place tuna mixture into a deep rectangular baking dish or into deep individual muffin tins, small pie dishes. |

3.
| Whisk together the eggs, Valcom Yellow Curry Paste and TCC Coconut Milk pour over the tuna and vegetable mixture . Shake well to settle. |

4.
| Bake in the pre-heated oven 170˚C for 45 minutes until firm to touch and golden. |
|
5.
| Serve hot with sweet chilli sauce and fresh garden salad. |
